- 📝 Ingredients:
- Chicken – 500g (boneless or with bone)- Onion – 1 large (sliced)
- Garlic – 3 cloves (crushed)
- Ginger – 1 tsp (grated)
- Tomatoes – 2 medium (chopped)
- Coconut milk – 1 cup
- Curry powder – 2 tsp
- Chili powder – 1 tsp
- Turmeric powder – ½ tsp
- Salt – to taste
- Pepper – ½ tsp
- Oil – 2 tbsp
- Curry leaves & pandan leaves – few

👩🍳 Instructions:
1. Heat oil in a pan. Add onions, garlic, and ginger. Sauté until golden.
2. Add curry leaves and pandan leaves.
3. Add chicken pieces and cook until slightly brown.
4. Mix in all spices: curry powder, turmeric, chili powder, salt & pepper.
5. Add chopped tomatoes and cook until soft.
6. Pour in coconut milk and mix well.
7. Cover and simmer for 15–20 minutes on low heat until chicken is fully cooked and gravy is thick.
8. Taste and adjust seasoning if needed.
